Where does one set the fonts? I know that you can do it in options, in Inspector, on the edit page. But which place sets it for the program?

And then once I set it there, where and how can I override it? For example, can I click on a slide to change the font or do I actually have to select the text that I want to change?

Hi,
You can change font settings under, the edit menu in options.
You can override the global font settings you set in options with a theme, or by selecting the text and changing the formatting.

So when I move an image to themes, what font will it use?

It will use the default font you set in options. You can right click on the theme and edit it, if you want to override the default font.
