How do I change the registered organisation details and account number on the up graded v7 install?

The easy worship 7 details for Laidley Baptist Church need to be changed. it was originally in the name of our pastor Marshall Muller, but Marshall is no longer our pastor, and we would like to change Name of the Account, the email address and the card number for payment of the subscription.

I've been in touch with Marshall, we have already changed the password, and he is happy to have his name details removed from the rest, including his Visa Card. 

how do I do all of this so that he doesn't get all the emails and his Visa Card is not raided.
