 Are there token in Easy worship six like Book, Chapter, Verse to display scripture in a lower thirds image?

I tried {Book} {Chapter}:{Verse} and [Book] [Chapter]:[Verse] but no luck?

No there is not. You can edit the scripture in the schedule or edit the default scripture theme and set the text box as a lower third for your slide.
